Purpose
Valorizing pulse co-product streams is an important aspect of profitability and sustainability for the pulse protein production industry, especially in cases where the pulse starch co-product is abundant, but has limited value. In the Project, different pea starch materials (native and modified) will be profiled and the most essential properties identified to enable optimal use of the material in industrial (non-food) applications. Ultimately, information collected from the Project will help refine a road map that will guide decision making by both producers and end-users for the increase use of pea starch materials in industrial applications.
