Purpose

NAIT Centre for Culinary Innovation (CCI) will provide product development services to SMEs in Western Canada with focus not only on flavour and safety but also on the optimization of by product streams and the use of locally grown ingredients. CCI is striving to fill the gap in value-added utilization of Canadian commodities by innovating and creating a circular, sustainable economy for Alberta and Canada as a whole. The three major pillars that CCI has expertise in are: fermentation, waste and by product utilization and sensory analysis as it pertains to food product development.
